Slow cooked oxtail with red wine roasted shallots and confit carrots
Creditton Farm guinea fowl with white wine, parsley, bacon and cream
Confit Duck Leg with Lyonnaise potatoes, pan fried liver and pickled cabbage
Ardennes style local Rainbow trout, with lemon thyme, ham and cream
Pan fried calves liver with sautéed potatoes, persillade and watercress
Grilled Entrecote with duck fat chips, marrow and red wine shallots
Morel and chanterelle puff pastry tart, with clotted cream and rainbow chard
Spinach and blue D’avergne soufflé with wild leaves, caramelised walnuts and truffle honey
